Ingredients

  • 8 Eggs hard boiled
  • 1 teaspoon mustard
  • 1 Tablespoon sweet pickle relish
  • 1/3 cup mayonnaise
  • ½ teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 teaspoon paprika for garnish

Instructions

  • Hard boil your eggs. I always make 8 to actually get 6, because I usually lose one or two in the cooking or peeling. I like to leave a margin!
  • The way I cook the eggs is put the eggs in cold water and let them come up to a boil and boil for about 10 minutes. I put the lid on and remove from heat and let sit 10-15 mintues.
  • Then I drain the water and replace with cold water and ice.
  • Let eggs sit another 15-20 minutes. When eggs are ice cold, they are much easier to peel.
  • Peel eggs and chop in half, putting the yolks in a separate bowl and putting the egg whites on your serving tray.
  • Mash the egg yolks into a fine mixure and add in the mustard, pickle relish, mayonnaise, salt & pepper. Adjust to your taste.
  • Put the yolk mixure in a disposable sandwich bag and snip off a corner with scissors.
  • Pipe the egg filling into the egg whites.
  • Sprinkle with paprika for garnish.
  • Store in the fridge until ready to serve.
