Instructions
Dough
Make Dough - In a food processor, combine flour, butter, sugar and salt.
Pulse in the ice cold water until the dough forms a ball. You may not need all the water.
Wrap dough in plastic wrap and refrigerate to chill for at least an hour. Overnight is totally fine.
Filling
For filling, add brown sugar, cinnamon, vanilla and flour and combine well.
Assembly
Roll out dough to around 1/8-1/4 inch thick and cut same sized rectangles out of dough. (you can re-roll the excess to make extra pastries!).
Brush egg wash onto the tops of all the rectangles.
Spoon pastry filling onto half the rectangles, leaving at least a half-inch margin.
Put a rectangle over the top of the filled rectangles and pinch edges with a fork. Poke a few holes on top for venting.
Put pastry on lined baking sheet and bake at 375* for 15 minutes or lightly golden.
While pop tarts are baking, mix icing ingredients and add more milk if icing is too thick. Pour onto slightly cooled pastries and serve immediately.
