Make a double boiler with a heat-safe glass bowl and a small saucepan.
Put about 2 inches of water in the saucepan and heat on medium-low heat with the glass bowl sitting on top of the saucepan.
If your chocolate is a bar, chop it up into smaller pieces. If it's chocolate chips, simply dump them into the glass bowl.
18 ounces Semi-sweet chocolate
Pour the heavy cream on top of the chocolate.
1 cup Heavy whipping cream
Add the vanilla extract.
1½ teaspoons Vanilla extract
Gently stir with whisk until chocolate has completely melted into the cream and it's a smooth, thick chocolate mixture.
Let cool, cover, and chill for at least 6 hours, but overnight is better!
When ready to roll truffles, line a sheet pan (that fits in your fridge) with parchment paper.
Use a small scooper to scoop the chocolate and roll it into desired shape/size truffles.
Put rolled truffles back in the fridge for at least 30 minutes, on the baking sheet.
Remove truffles from the fridge and roll in desired toppings to finish.
1 cup Chopped pecans, 1 cup Sliced almonds, 1 cup Shredded coconut, 1 cup Crushed peppermints, ½ cup Cocoa Powder, ½ cup Decorative Sugar
Store in the refrigerator.
