  • Oven Mitts – This is a heavy and hot dish! Make sure you have good oven mitts to protect your hands!
  • Cutting Board – I’ve had these for years and I love them. Mine are red! They are the perfect sizes, easy to store, and have a little groove around the edges to stop juices from flowing all over. This is the cutting board I go to time and time again when I’m cooking.
  • Baking Sheets – These Nordic Ware natural aluminum commercial baker’s half sheets are my absolute favorite baking sheets I’ve ever owned in my cooking days! They are super heavy-duty, have a great rim around them, and they stay in great shape no matter what you cook on them. And they clean up incredibly easily as well!
  • Glass Mixing Bowls – This is a nesting set of glass bowls. I find I can’t have enough glass bowls in my kitchen!
  • Fish Turner Spatula – This is my favorite kind of spatula. Technically, it’s for fish, but I use it all the time for baking! I love it and have several. I rarely reach for a regular spatula anymore!
The ingredients for sheet pan chicken fajitas which include a package of boneless chicken breasts, a green bell pepper, a red bell pepper, a yellow onion and a taco seasoning pack. All of this is on a sheet pan.

Ingredients

  • Boneless skinless chicken breasts – Lean and quick-cooking, chicken breast is a great protein choice. Feel free to swap with thighs or another protein! Chicken tenderloin (Chicken tenders) is already the perfect size for fajitas, too!
  • Bell peppers – Choose your favorite colors! Red, green, and yellow bell peppers all add sweetness and crunch to the dish. I like to use green bell peppers and a sweet red pepper for a good flavor mix.
  • Onion – A yellow or red onion works well, adding a sweet and savory base flavor. Yellow onion is my go-to choice.
  • Taco seasoning mix – Use your favorite store-bought packet or make your own homemade fajita seasoning mix for a homemade touch.
  • Olive oil – Helps coat everything evenly and adds moisture while roasting. Vegetable oil works great, too!
  • Tortillas – Flour tortillas or corn tortillas, big or small—pick what your family loves best! Want to keep it lower in carbs? Feel free to make a chicken fajita bowl with no tortilla at all!
  • Toppings of choice – Think sour cream, shredded cheese, salsa, avocado, guac, jalapeños… the sky’s the limit with this fajita recipe!

Substitutions, Modifications, and Additions

This recipe is super flexible, so you can tweak it to fit your needs or preferences.

Substitutions

  • Protein options – Swap chicken for steak, shrimp, tofu, or even portobello mushrooms for a vegetarian version.
  • Wrap Options – If you want to keep the meal low carb, then feel free to use lettuce wraps instead of tortillas. These are really tasty!
  • Seasoning mix – Use fajita seasoning or a homemade blend of chili powder, cumin, garlic powder, and paprika instead of a taco packet.

Modifications

  • Gluten-Free – Use gluten-free tortillas, and make sure your taco seasoning mix is certified gluten-free.
  • Dairy-Free – Simply skip cheese or sour cream, or use dairy-free alternatives if desired.

Additions

  • Black beans or corn – Toss in a can of drained black beans or corn before baking for added flavor and nutrition.
  • Lime juice or zest – Squeeze fresh lime over the finished fajitas for a bright, citrusy finish. The lime juice really gives the fajitas a nice little zip!
  • Hot Sauce – Want a little extra spice and zip? Add a little shake of hot sauce over your fajita filling!
  • Poblano Pepper – If you want a little more smoky heat, try adding in a poblano pepper to the mix!
  • Cayenne Pepper – Want a little more heat? Add some cayenne pepper to the seasoning mixture! Remember a little goes a long way!

Step-by-Step Instructions

Preheat. Preheat your oven to 400°F and line a large sheet pan with aluminum foil for easy clean-up. I like to spray my aluminum foil with cooking spray for best results. No sticking that way!

Chop. Slice your chicken breast, bell peppers, and onion into thin strips so everything cooks evenly and fits nicely into tortillas.

The fajita vegetables in a glass bowl with the seasoning sprinkled on top of them ready to mix. Next to the bowl is a purple knife.

Season. Add the chicken and veggies to a large mixing bowl. Drizzle in the oil and sprinkle in the taco seasoning. Mix everything well to coat.

A sheet pan covered in aluminum foil with raw fajita ingredients on it including chicken, onions and red and green bell peppers. All are covered in a marinade seasoning and are ready to roast in the oven.

Spread. Pour the seasoned mixture onto your prepared sheet pan. Spread it all out into a single, even layer.

Bake. Place in the oven and bake for 15 minutes.

Stir. Pull the pan out and give everything a good stir. Spread back into an even layer.

Bake again. Return the pan to the oven for an additional 15–20 minutes. The cook time will vary depending on how cooked and browned you like the meat and veggies. I like it a little brown, I think it has the best flavor!

Assemble and Serve. Spoon the filling into warm tortillas, top with your favorites like sour cream and cheese, and enjoy!

Tips and Notes

  • Don’t skip lining the sheet pan—it makes cleanup so much easier!
  • Cut everything into similar-sized strips so it all cooks evenly.
  • You can prep the chicken and veggies earlier in the day and refrigerate them until ready to bake.
  • Don’t overbake—check for doneness at 25 minutes total to avoid drying out the chicken. If you are nervous about the chicken being done, you can always you a meat thermometer and make sure the chicken is cooked to 165* internally!

Serving Suggestions

These Simple Sheet Pan Chicken Fajitas are a full meal on their own, but you can easily round them out with some tasty sides!

  • Side Dish – Serve with a side of Spanish rice, refried beans, or black beans.
  • Bread/Rolls – While tortillas are the star, you can also serve them with warm cornbread muffins or chips and salsa for a fun twist.
  • Dessert Idea – End the meal with an easy dessert like churros, cinnamon-sugar tortilla crisps, or a scoop of vanilla ice cream with caramel drizzle. Or 3-ingredient Lime Sherbert!

Storage and Reheating Instructions

Storage

  • Refrigerator – Store leftover chicken and veggie mix in an airtight container in the fridge for up to 3–4 days. These leftovers warm up just beautifully!
  • Freezer – You can freeze the cooked fajita mixture for up to 2 months. Let it cool completely before freezing in a zip-top bag or freezer-safe container.

Reheating

  • Stovetop/Oven – Reheat on the stovetop in a skillet over medium heat or in the oven at 350°F until warmed through.
  • Microwave – Heat in 30-second intervals, stirring in between, until hot.
  • From Frozen – Let thaw overnight in the fridge or use a skillet with a little water and cover with a lid to steam-heat it from frozen.

Frequently Asked Questions (FAQs)

Can I prep this ahead of time?

Absolutely! You can chop and season everything earlier in the day and store it covered in the fridge until you’re ready to bake. I like to go ahead and put all the ingredients in a large bowl and do the seasoning as well, so it can marinate all day.

Can I use chicken thighs instead of breasts?

Yes! Chicken thighs work great and add a little extra richness and moisture.

Is this kid-friendly?

Totally! The seasoning is flavorful but not spicy. You can adjust spice levels to taste and let kids build their own fajitas with their favorite toppings.

What if I don’t have taco seasoning?

No worries! Make your own quick mix with chili powder, garlic powder, cumin, paprika, salt, and pepper.
