Quick and Easy Lasagna Soup Recipe

Lasagna is so wonderful, but it can really take a long time to make. My new obsession and favorite shortcut is my easy and quick lasagna soup recipe. It’s all the flavor of a traditional lasagna in 30 minutes start to finish!

I love lasagna. I’d say it’s one of my top three favorite meals of all time. But it takes SO, SO, SO long to make! When I do make it, I try to make extra so that I can throw some in the freezer too. (Here’s my traditional lasagna recipe if you want it!) But it just takes so long to make and makes such a mess. I kept seeing all kinds of recipes for lasagna soup, and I thought, that can’t be as good as the real thing. So, I begrudgingly tried the recipe, basing it on my recipe for traditional lasagna. And… it’s AMAZING! And so easy! It’s delicious! Where has this been all of my cooking life??! Let’s get going on this easy lasagna soup recipe because I want you to have this nugget of information in your hands as quickly as possible!

Ingredients

  • Ground beef
  • Onion
  • Garlic
  • Italian Seasoning
  • Salt and Pepper, to taste
  • Marinara sauce
  • Beef broth
  • Pasta
  • Ricotta cheese
  • Cottage cheese
  • Parmesan cheese
  • Mozzarella cheese

Cooking Instructions:

Step 1

Chop up the onion and mix with the ground beef in a large pot.

Step 2

When beef is completely brown, drain it from all the grease and return to the pot.

Step 3

Marinara sauce poured over the cooked ground beef

Add in the garlic, Italian Seasoning, salt, pepper, marinara sauce, and beef broth. Mix well together and bring to a simmer.

Step 4

Add in your dry pasta and let simmer on low for about 20 minutes. Use whatever kind of pasta you have. I just broke up some big pieces of lasagna noodles.

Step 5

While the soup is cooking away, make your cheese mixture.

Step 6

In a separate bowl, add in ricotta cheese, cottage cheese, parmesan cheese, and mozzarella cheese and mix until well combined.

Step 7

When your noodles are cooked through the soup is done!

With a ladle, put some of your soup in a bowl and top with a scoop of your cheese mixture! Add some additional parmesan cheese to the top and enjoy!

Preparation Tools

  • Santoku Knife – You don’t have to go out and buy a nice knife. BUT, if you were in the market for a knife, this is the one I couldn’t do without, and the one I go for time and time again. It’s wonderfully and beautifully made. I’ve had this knife for over 10 years and it’s my favorite thing in my entire kitchen. You truly do get what you pay for in knives. These are made in Germany but are widely sold in the United States now. You can go way higher in quality as well, this is just a starting point.
  • Cutting Board – I’ve had these for years and I love them. Mine are red! They are the perfect sizes, easy to store, and have a little groove around the edges to stop juices from flowing all over. This is the cutting board I go to time and time again when I’m cooking.
  • Cheese Grater – Quick secret? I hate grating cheese. But freshly grated cheese is SO good. And I really don’t like washing a cheese grater. HOWEVER, I have found the solution to this dilemma! I do love this cheese grater. It folds flat, comes apart, and is dishwasher safe. Oxo Good Grips for the win!

Cooking Tools

  • Spatula Set – This is the greatest set ever. Not only does it have several handy spatulas, it has a few tiny ones too, to help you get every single scrape out of jars and containers!
  • Glass Mixing Bowls – This is a nesting set of glass bowls. I find I can’t have enough glass bowls in my kitchen!
  • Bamboo Spoon Set – I love to use Bamboo spoons for cooking and stirring in the kitchen! They come in so many shapes and sizes that are just perfect for every kitchen job!
  • Stock Pot I love this pot for pasta and sauces. It’s tall enough that it fits all kinds of pasta noodles!
  • Airtight Food Storage Containers – These are fantastic. They keep food air-tight and fresh so well!

Make Ahead Instructions:

This soup is amazing to make ahead of time. But if you do, make it without the noodles. Then, when it’s time to serve the soup, warm it back up on the stove in a pot, bring the soup to a simmer, and then add in the noodles. Add a little beef broth or water if the soup gets too thick.

Substitutions and Modifications

Feel free to make this recipe your own and modify it to your dietary needs and wants! It’s super simple to switch out for your preferences and you can make it gluten-free, dairy-free, or vegetarian so easily!

Meat

This recipe is made with ground beef, but ground turkey, ground chicken, or veggie crumbles work beautifully in this recipe. The soup has so much flavor that the meat tends to take that flavor on, too, so you might as well save a few calories and throw some turkey in there!

Vegetables

Feel free to add some vegetables to the soup. It would be amazing with some zucchini, squash, or corn! It would really give it extra bulk and delicious flavor for sure.

Pastas

I think it’s super fun to use the broken lasagna noodles in this soup, but having said that, you can use any kind of pasta you want in this soup. Smaller pasta like shells or rotini might be a little more manageable on spoons!

Dietary Restrictions

Gluten-Free

If you want to make this recipe gluten-free, simply substitute your noodles and make sure your cheese is all gluten-free. It all should be, but sometimes pre-shredded cheese has gluten because of what they toss the shreds in so that the pieces don’t stick together.

Dairy Free

If you are dairy-free, there are a few ways you can adapt this recipe. For one thing, you can simply omit the cheese topping. However, it’s so good! So, get some vegan or dairy-free parmesan and mozzarella, and then here are recipes for cottage cheese and ricotta cheese:

What to Serve With Lasagna Soup

I usually have the exact same thing we have with regular lasagna: breadsticks and a big green salad! It’s just the perfect combination, and I love a soup and salad night.

Freezing Instructions

Can you freeze lasagna soup? You bet you can! It freezes beautifully and will keep in the freezer for up to six months. Just thaw it completely in the refrigerator and then heat it back up on the stove. I would suggest making a new cheese mixture though – that part will not freeze well at all.

Storage

Store this soup in the refrigerator for up to 4 days in an airtight container. I’d suggest keeping the cheese mixture stored in a separate airtight container, and it will also remain good for 4 days. Lasagna soup will last about 4 days in the refrigerator.

Frequently Asked Questions (FAQ’s)

I really like Italian Sausage in my lasagna. Could I add that to this recipe?

Absolutely! You could make all of the meat in the recipe, or you can go half and half with the beef and that would be delicious. My original lasagna recipe calls for a pound of ground beef and a pound of breakfast sausage. But Italian sausage works beautifully in this soup.

My lasagna soup is too “Soupy.” How can I fix it?

There are a few ways you could go here. You can add a little cream to thicken things up. Or, you could throw in a few more noodles to help soak up the excess liquid. If it’s just WAY too runny, mix about 2 teaspoons of cornstarch with some beef or chicken stock (Or just water if it’s what you have on hand) and then add it to the soup and it should thicken nicely. And that’s how you thicken lasagna soup!!

Is this lasagna soup healthy?

This recipe is actually quite healthy, especially if you opt for lower-fat cheese and turkey or chicken as the protein in the soup!

Is lasagna soup gluten-free?

Ingredients

  • 2 pounds ground beef
  • 1 onion
  • 2 cloves garlic minced
  • 1 tsp Italian Seasoning
  • Salt and Pepper to taste
  • 1 jar marinara sauce
  • 4 cups beef broth
  • 2 cups dried pasta
  • 1/2 cup ricotta cheese
  • 1/2 cup cottage cheese
  • 1/2 cup parmesan cheese
  • 1/2 cup mozzarella cheese

Instructions
