The result? A crunchy, custardy delight that will make your mornings feel extra special, and your kids will love it! Whether you’re whipping this up for a weekend brunch or looking to surprise the kids with a fun breakfast twist, this is a must-try recipe.

Growing up, Cap’n Crunch was often in our pantry—usually reserved for an afternoon snack straight from the box. I LOVED it as a kid. I saw an idea for a similar recipe on The Pioneer Woman, and I decided to experiment. One bowl of cereal, a few eggs, and a little imagination later, this recipe was born—and it’s been a family favorite ever since.

  • Large non-stick skillet – I like this one because it comes with a lid. If I’m going to buy a pan or pot I like to have as many options to use it as possible!
  • Flat Whisk – I adore this OXO Good Grips Flat Whisk. If I couldn’t have anything else in the kitchen, THIS is the gadget I’d keep. It’s the best whisk I’ve ever had, and the flat part of the design is such a game-changer for making things in the pan! I could not recommend this more! This is the only brand I’ve ever had, and I’m a big fan of all the OXO products.
  • Glass Mixing Bowls – This is a nesting set of glass bowls. I find I can’t have enough glass bowls in my kitchen!
  • Fish Turner Spatula – This is my favorite kind of spatula. Technically, it’s for fish, but I use it all the time for baking! I love it and have several. I rarely reach for a regular spatula anymore!
Ingredients for Captain Crunch French Toast including thick sliced bread, heavy cream, sugar, vanilla extract, butter, cinnamon, eggs and Cap'n Crunch cereal.

Ingredients

  • Texas Toast Bread – Thick-cut bread is perfect for soaking up the custard while staying sturdy and fluffy inside. Texas Toast French toast is my favorite. I just love that the bread comes already sliced and it’s super thick. It’s my favorite type of French Toast bread.
  • Eggs – The base of your custard mixture.
  • Cap’n Crunch Cereal – Crushed into a coarse coating, this cereal creates the iconic crispy texture.
  • Heavy Cream – Adds richness and creaminess to the custard.
  • Butter – For frying and getting that perfect golden-brown crust.
  • Granulated Sugar – Adds a hint of sweetness to the egg mixture.
  • Vanilla Extract – Enhances the flavor with warm, sweet notes.
  • Cinnamon – A classic spice that pairs beautifully with the cereal coating.

Substitutions, Modifications, and Additions

This recipe is super flexible and can easily be adjusted to fit your needs.

Substitutions

  • Bread Substitution – If you don’t have Texas Toast for French toast, try brioche or challah for a rich texture. Regular old sandwich bread works fine too, I just prefer thick slices of bread personally.
  • Milk for Cream – Whole milk or half-and-half can be used instead of heavy cream. Truly, any milk will do just fine!
  • Cereal –  There are so many different types of cereal that you can use! You could try Rice Kripsies, Cinnamon Toast Crunch, Frosted Flakes, etc. Cap’n Crunch French Toast is my favorite version, though!

Modifications

  • Gluten-Free – Sadly, Cap’n Crunch cereal is not gluten-free, and a whole bunch of cereals are not. Pick one you like that is, and add a little sugar to the breadcrumbs if you need to sweeten it up a bit. Use gluten-free bread and substitute a gluten-free cereal that has a similar sweet cereal crunch and you’ll still have a delicious French toast!
  • Dairy-Free – Use a plant-based cream (like coconut cream) and dairy-free butter. Best to watch your bread’s ingredients, too, just in case.

Additions

  • Top with whipped cream – Adds a light, sweet touch for serving.
  • Add fresh fruit – Strawberries, blueberries, or bananas pair perfectly.

Step-by-Step Instructions

Let’s dive into the instructions for how to make Captain Crunch French Toast!

Crush the Cereal. Add Cap’n Crunch cereal to a large zip-top bag and crush it using a rolling pin until it resembles coarse crumbs. I don’t suggest using a food processor here, the cereal will get too crushed up and turn into a flour-like consistency and we don’t want that.

Make the Custard. In a medium bowl, whisk together eggs, heavy cream, vanilla extract, sugar, and cinnamon until smooth and combined.

Set Up the Stations. Set out two shallow bowls—one shallow bowl with the custard, one with the crushed cereal.

Dredge the Bread. Dip a slice of Texas Toast into the egg mixture, then coat it in the crushed cereal, pressing slightly so it sticks. Repeat with all slices.

A gray frying pan and a piece of French toast is being flipped in it.

Cook the French Toast. Heat 2 tablespoons of butter in a large nonstick skillet over medium heat. (High heat will cook way too fast!) Cook each slice of French toast for 3–4 minutes per side until golden brown and crispy. I’d start checking for brownness after 2-3 minutes. Cook in a single layer so every piece of toast gets crunchy. Make sure the French toast is done and not mushy in the middle; you want well-cooked French toast.

Assemble and Serve. Plate up your toast and top with syrup, ice cream, or fresh berries. Serve immediately!

Tips and Notes

Use stale bread if possible—it absorbs the custard better without falling apart.

  • Don’t overheat the pan—you want medium heat to avoid burning the cereal coating.
  • Crush the cereal coarsely, not into powder, for the best crunchy texture.
  • Wipe out the pan between batches if the butter or cereal bits begin to burn.

Serving Suggestions

  • Syrups – This dish doesn’t really need to get any sweeter, but a little real maple syrup on the side never hurt anyone!
  • Side Dish – Crispy bacon or breakfast sausage
  • Dessert Idea – Top the warm slices of French Toast with a scoop of vanilla ice cream and a drizzle of caramel for a dessert-style brunch!

Storage and Reheating Instructions

Storage

  • Refrigerator – Store leftovers in an airtight container in the fridge for up to 2 days.
  • Freezer – Freeze slices between layers of wax paper in a zip-top bag for up to 2 months.

Reheating

  • Stovetop/Oven – Reheat in a skillet over medium-low heat or in a 350°F oven until warmed through.
  • Microwave – Heat in 20–30 second intervals (though the coating won’t be as crisp).
  • From Frozen – Toast in the oven at 375°F for 10–15 minutes or until heated through.

Frequently Asked Questions (FAQs)

Can I make this ahead of time?

Yes! You can prep and coat the bread slices, then store them in the fridge overnight and cook in the morning.

What kind of cereal works best?

Cap’n Crunch Original is best, but you can try Crunch Berries for a fun fruity twist!

Can I bake instead of fry?

Yes, place the coated slices on a parchment-lined baking sheet and bake at 375°F for 15–20 minutes, flipping halfway. It might even get a little crunchier this way!
